  • Makes: 1 serving (266 g)
  • Difficulty: Medium
  • Diets: Gluten-free, High protein, Low carb
  • Contains: dairy, poultry, sulphite

Ingredients

  • 220 g Cornish hen, raw
  • 10 g Garlic, raw
  • 15 g Butter, unsalted
  • 1 g Salt
  • 0.3 g Black pepper
  • 5 g Vinegar, red wine
  • 15 g Water

Method

  1. Spatchcock the small whole chicken (a Cornish hen works well) by cutting out the backbone, then press it flat, breastbone side up.
  2. Season both sides generously with the salt and pepper.
  3. Melt the butter in a heavy skillet just large enough to hold the chicken flat, over medium heat.
  4. Lay the chicken skin-side down in the pan, place a smaller heavy pan or a foil-wrapped brick on top to weigh it down, and cook for 12-15 minutes until deep golden.
  5. Flip, weigh it down again, and cook the other side for 10-12 minutes, until the chicken is cooked through with no pink at the bone (74°C/165°F).
  6. Meanwhile, crush the garlic into the water and vinegar to make a simple garlic sauce.
  7. Rest the chicken for 3 minutes, then serve drizzled with the garlic sauce.
