Kolompeh (Kermani Date-Filled Cookies)
One serving has 216 kcal and 3 g protein, and at least a fifth of a woman's daily need of manganese (22%) and copper (20%). Ready in 60 minutes.

- Preparation: 45 min
- Cooking: 15 min
- Makes: 1 serving (53.3 g)
- Difficulty: Medium
- Diets: Vegetarian
- Contains: dairy, egg, gluten, nut
Ingredients
- 15 g Flour, all-purpose
- 6 g Ghee
- 4 g Sugar
- 20 g Dates
- 5 g Walnuts
- 0.1 g Cardamom
- 0.1 g Cinnamon
- 0.05 g Turmeric
- 3 g Eggs, whole, raw
Method
- Makes about 20 cookies; the quantities here are for one, so multiply everything by 20 for a full batch.
- Pit and finely chop the dates, then mix with the chopped walnuts and cardamom to make a soft, sticky filling.
- Rub the ghee into the flour, sugar, cinnamon and turmeric (the turmeric gives the dough its traditional pale golden color), then bring together with a splash of water into a firm dough.
- Roll a small piece of dough thin, place a portion of the date filling in the center, and fold the dough over to enclose it completely; press flat and trim into a neat round or diamond.
- Prick the top a few times with a fork and brush lightly with the beaten egg.
- Bake at 180 °C (350 °F) for 12-15 minutes until just set and lightly golden at the edges; cool on a rack.
