  • Makes: 1 serving (438 g)
  • Difficulty: Hard
  • Diets: Dairy-free, High protein
  • Contains: celery, gluten, poultry

Ingredients

  • 160 g Chicken thighs, boneless, skinless, raw
  • 120 g Onions, raw
  • 20 g Olive oil
  • 60 g Flour, bread (strong)
  • 0.8 g Yeast, active dry
  • 35 g Water
  • 0.5 g Turmeric
  • 0.5 g Cinnamon
  • 0.4 g Black pepper
  • 1.2 g Salt
  • 40 g Chicken broth

Method

  1. Boil the chicken in lightly salted water until fully cooked through to 74 °C (165 °F), then lift out, reserving the broth, and shred once cool enough to handle.
  2. Slowly caramelize the thinly sliced onion in half the olive oil over low heat, stirring often, 30-40 minutes until deep golden and jammy.
  3. Meanwhile dissolve the yeast in the reserved warm broth and water, and knead into the flour with the remaining oil and salt to make a soft, elastic dough; let rise about 1 hour.
  4. Toss the shredded chicken with the caramelized onion, turmeric, cinnamon and pepper.
  5. Divide the dough in two, press one piece over the base of a greased round pan, spread the chicken and onion filling evenly over it, then cover with the second piece of dough, sealing the edges.
  6. Bake at 180 °C (350 °F) for 2-2.5 hours until deeply golden and cooked through, then cut into triangular slices like a cake to serve.
