  • Preparation: 45 min
  • Cooking: 15 min
  • Makes: 1 serving (111 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: dairy, gluten, nut

Ingredients

  • 45 g Almond flour
  • 18 g Sugar
  • 8 g Butter, unsalted
  • 6 g Water
  • 0.3 g Cinnamon
  • 25 g Flour, all-purpose
  • 6 g Vegetable oil
  • 3 g Sugar, powdered

Method

  1. Knead the almond flour with the sugar, melted butter, orange blossom water (or plain water) and cinnamon into a smooth, pliable paste; this makes about 4 crescents (multiply by 6 for a batch of roughly 24).
  2. Roll the paste into thin finger-lengths and set aside.
  3. Mix the flour, oil, a splash of water and a pinch of salt into a smooth, elastic dough; rest 15 minutes, then roll out paper-thin.
  4. Cut strips of dough, lay an almond finger along the edge, roll up and bend into a crescent, pinching the seam and trimming the excess dough.
  5. Prick each crescent a few times with a pin and bake at 180 °C (350 °F) for 12-15 minutes until pale golden, not browned.
  6. Cool completely and dust lightly with powdered sugar before serving.
