  • Preparation: 15 min
  • Cooking: 20 min
  • Makes: 1 serving (60 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, gluten

Ingredients

  • 20 g Ghee
  • 12 g Sugar, powdered
  • 25 g Flour, all-purpose
  • 3 g Pine nuts

Method

  1. Beat the ghee and powdered sugar together until light, pale and fluffy, about 3-4 minutes.
  2. Gently fold in the flour until just combined into a soft, slightly crumbly dough; do not overwork it.
  3. Shape the dough into small balls or crescents and place them on a lined tray.
  4. Press a pine nut into the centre of each cookie.
  5. Bake at 150°C (300°F) for about 20 minutes; they should stay pale and only just set, not browned.
  6. Let the cookies cool completely on the tray before moving them, since they are very fragile while warm; this makes about 1 serving of 3 cookies.
