Ingredients

  • 40 g Bulgur
  • 30 g Onions, raw
  • 40 g Cucumber, raw
  • 40 g Tomatoes, raw
  • 10 g Parsley, fresh
  • 3 g Mint, fresh
  • 10 g Lemon juice
  • 1.5 g Lemon zest
  • 8 g Olive oil
  • 20 g Grape leaves, brined
  • 1 g Salt
  • 60 g Water

Method

  1. Sauté the chopped onion in the olive oil until golden, then add the bulgur and water; cover and cook over low heat for 10-12 minutes until the water is absorbed and the bulgur is tender.
  2. Remove from the heat, fluff with a fork, and let cool to room temperature.
  3. Stir in the diced cucumber and tomato, chopped parsley, mint, lemon juice, sumac (or the lemon zest here) and salt.
  4. Rinse the brined grape leaves to remove excess salt.
  5. Spoon a little of the bulgur mixture into the centre of each leaf and fold into small parcels ("sachets"); if you don't have grape leaves, use lettuce or cabbage leaves instead.
  6. Arrange on a plate and serve at room temperature as a light salad, in the old rural style once known as "poor man's food."
