Simit (Sesame Bread Ring)
One serving has 529 kcal and 15 g protein, and at least a fifth of a woman's daily need of copper (116%), thiamin (96%), selenium (81%), manganese (76%), niacin (60%) and folate (55%). Ready in 100 minutes.

- Preparation: 80 min
- Cooking: 20 min
- Makes: 1 serving (186 g)
- Difficulty: Medium
- Diets: Vegan, Dairy-free
- Contains: gluten, sesame
Ingredients
- 90 g Flour, bread (strong)
- 55 g Water
- 1.5 g Yeast, active dry
- 3 g Sugar
- 1.5 g Salt
- 10 g Molasses
- 20 g Sesame seeds
- 5 g Vegetable oil
Method
- Dissolve the yeast and sugar in the water and let it stand for 5-10 minutes until foamy.
- Mix in the flour, salt and oil, and knead for 8-10 minutes until smooth and elastic.
- Cover and let the dough rise in a warm place for about 1 hour, until doubled.
- Divide the dough, roll it into a long rope, then twist it and join the ends to form a ring.
- Stir the molasses (a good stand-in for pekmez) with an equal amount of warm water, dip the ring in it, then roll it generously in the sesame seeds.
- Let the coated ring rest for 15-20 minutes on a lined tray.
- Bake at 220°C (425°F) for 18-20 minutes, until deep golden brown and crusty; this makes 1 simit, so multiply everything for more.
