Ingredients

  • 150 g Lamb shoulder, raw
  • 70 g Rice, white, long-grain
  • 60 g Potatoes, raw
  • 40 g Onions, raw
  • 30 g Yogurt, plain
  • 5 g Garlic, raw
  • 3 g Ginger, fresh
  • 10 g Tomato paste
  • 1 g Cumin
  • 0.5 g Cardamom
  • 0.3 g Cinnamon
  • 0.1 g Cloves
  • 0.5 g Turmeric
  • 12 g Vegetable oil
  • 1.5 g Salt
  • 130 g Water

Method

  1. Mix the lamb with the yogurt, crushed garlic, ginger, cumin, turmeric and a pinch of salt; marinate at least 30 minutes.
  2. Heat the oil in a pot and fry the sliced onion until golden; remove half for garnish.
  3. Add the marinated lamb to the pot and brown for 5-6 minutes, then stir in the tomato paste, cardamom, cinnamon and cloves.
  4. Add the diced potato and the water; cover and simmer 40-45 minutes until the lamb is tender.
  5. Rinse the rice, stir it into the pot, and add a little more water if needed so the rice is just covered.
  6. Cover tightly and cook over low heat for 18-20 minutes until the rice is tender and the liquid is absorbed.
  7. Fluff gently, scatter with the reserved fried onions, and serve hot with a chili-herb sauce (sahawiq) on the side, if you like.
