  • Preparation: 60 min
  • Cooking: 15 min
  • Makes: 1 serving (154 g)
  • Difficulty: Hard
  • Contains: alcohol, beef, dairy, egg, gelatin, gluten, pork

Ingredients

  • 15 g Flour, all-purpose
  • 8 g Butter, unsalted
  • 48 g Sugar
  • 40 g Egg whites, raw
  • 2 g Gelatin
  • 30 g Cream, heavy
  • 1 g Vanilla extract
  • 10 g Water

Method

  1. Preheat the oven to 180°C (355°F). Rub the flour, butter and 8 g of the sugar together and press into a thin round on a lined tray.
  2. Bake the base for 12-15 minutes until pale golden, then cool completely.
  3. Sprinkle the gelatin over the water and let it bloom for 5 minutes, then gently melt it.
  4. Whisk the egg whites to soft peaks, then gradually whisk in the remaining sugar until thick, glossy and cool, about 8-10 minutes.
  5. Whisk the melted gelatin into the meringue, then whip the cream separately and fold it through.
  6. Spread the meringue-cream thickly over the cooled base and chill for at least 2 hours until set.
  7. Cut into a square slice to serve; the egg whites are cooked by the hot gelatin syrup and long whisking, but this is still a soft-set dessert best kept for people who can eat lightly set egg white.
