  • Cooking: 150 min
  • Makes: 1 serving (163 g)
  • Difficulty: Easy
  • Diets: Vegan, Gluten-free, Dairy-free

Ingredients

  • 150 g Plums, raw
  • 10 g Sugar
  • 0.3 g Cinnamon
  • 3 g Lemon juice

Method

  1. Halve and pit the plums.
  2. Put the plums in a heavy pot with the sugar and cinnamon and bring to a gentle simmer.
  3. Cook uncovered over very low heat for 2.5-3 hours, stirring often and scraping the bottom, until reduced to a very thick, dark, spreadable paste.
  4. Stir in the lemon juice in the last few minutes.
  5. Cool, then spoon into a small clean jar; this quantity makes about 6 servings, so multiply for a bigger batch.
  6. Spread on bread or use as a filling, as is traditional.
