  • Preparation: 20 min
  • Cooking: 30 min
  • Makes: 1 serving (369 g)
  • Difficulty: Medium
  • Contains: beef, dairy, gluten, meat, pork

Ingredients

  • 80 g Blood sausage
  • 60 g Lamb liver, raw
  • 20 g Lamb fat
  • 20 g Oats, rolled
  • 20 g Onions, raw
  • 150 g Rutabaga, raw
  • 10 g Butter, salted
  • 8 g Cane syrup
  • 0.5 g Salt

Method

  1. Peel and chop the rutabaga and boil it in salted water for 20-25 minutes until very tender; drain and mash with the butter.
  2. Finely chop the lamb liver, or pulse briefly in a food processor.
  3. Melt the lamb fat in a pan and soften the onion for 3-4 minutes.
  4. Stir in the chopped liver and oats and cook for 4-5 minutes until the liver is cooked through with no pink remaining; season with the salt, then shape into a patty and let it firm up for a few minutes.
  5. Slice the blood sausage and fry it in a dry pan for 3-4 minutes per side until heated through and lightly crisp.
  6. Fry the liver patty for 3-4 minutes per side until firm and cooked through.
  7. This home version pan-fries both parts rather than boiling them for hours in a stuffed stomach lining, as is traditional; serve with the mashed rutabaga and a drizzle of syrup.
