  • Preparation: 60 min
  • Cooking: 60 min
  • Makes: 1 serving (161 g)
  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 40 g Egg yolks, raw
  • 20 g Eggs, whole, raw
  • 30 g Sugar
  • 25 g Butter, unsalted
  • 30 g Flour, all-purpose
  • 15 g Sour cream
  • 0.5 g Vanilla extract

Method

  1. Beat the egg yolks and whole egg with the sugar until very pale and thick, about 5 minutes.
  2. Beat in the melted butter, sour cream and vanilla.
  3. Fold in the flour to make a smooth, pourable batter.
  4. Traditionally the batter is dripped in thin layers onto a rotating spit under a grill, building up branch-like drips one layer at a time over an hour or more; at home, brush thin layers onto a greased cone or rolling pin and cook each under a hot grill for 1-2 minutes until golden before adding the next.
  5. Repeat until the batter is used up and the shape has built up craggy 'branches'.
  6. Let the finished cake cool completely on the mold before easing it off.
  7. Cut a slice from one of the branches to serve; a full šakotis is a large centerpiece cake for a wedding or holiday table.
