Ingredients

  • 50 g Navy beans, dried
  • 40 g Ham hock, smoked
  • 30 g Carrots, raw
  • 30 g Onions, raw
  • 5 g Garlic, raw
  • 2 g Paprika
  • 10 g Tomato paste
  • 0.2 g Bay leaves
  • 5 g Flour, all-purpose
  • 8 g Olive oil
  • 0.5 g Salt
  • 350 g Water

Method

  1. Soak the beans in plenty of cold water for at least 8 hours or overnight, then drain and rinse.
  2. Put the beans in a pot with the fresh water, ham hock, bay leaf and half the salt; bring to a boil, skim, and simmer for about 1 hour until the beans are almost tender.
  3. Meanwhile, cook the onion, carrot and garlic in the oil for 6-7 minutes until soft, then stir in the paprika and tomato paste and cook for 1 minute.
  4. Sprinkle in the flour and stir for a minute to make a light roux, then ladle in some of the hot bean broth, whisking until smooth, and stir the mixture back into the pot.
  5. Simmer for a further 20-25 minutes until the beans are completely soft and the soup has thickened slightly; lift out the ham hock, shred any meat back into the pot and discard the bone.
  6. Season with the remaining salt and serve hot with crusty bread.
