  • Contains: beef, dairy, egg, gluten

Ingredients

  • 180 g Beef liver, raw
  • 30 g Flour, all-purpose
  • 30 g Eggs, whole, raw
  • 30 g Milk, whole
  • 15 g Vegetable oil
  • 60 g Carrots, raw
  • 40 g Onions, raw
  • 30 g Sour cream

Method

  1. Blend the beef liver with the flour, egg and milk until smooth to make a thin batter.
  2. Season the batter with half the salt and pepper.
  3. Heat a little oil in a pan and ladle in the batter thinly, like a crepe, cooking for 2 minutes per side until fully set and cooked through with no pink; repeat to make several thin liver pancakes.
  4. Grate the carrot and finely chop the onion, then sauté both in the remaining oil for 6-8 minutes until soft.
  5. Stir the sour cream and remaining salt and pepper into the carrot mixture.
  6. Stack the liver pancakes with a layer of the carrot mixture between each, pressing gently to form a cake.
  7. Chill for at least 1 hour, then slice into a wedge to serve cold.
