  • Difficulty: Easy
  • Diets: Vegetarian, Gluten-free

Ingredients

  • 500 g Milk, whole
  • 20 g Lemon juice

Method

  1. Pour the milk into a pot and warm it gently until just below a simmer.
  2. Stir in the lemon juice and let it sit off the heat for 5-10 minutes until it visibly separates into curds and whey.
  3. Line a sieve with a clean cloth or cheesecloth set over a bowl.
  4. Gently pour the curds and whey into the lined sieve and let it drain for 10-15 minutes for a soft, spoonable curd, or up to an hour, gathered up and squeezed, for a firmer one.
  5. Discard the drained whey, or keep it for baking.
  6. Chill the finished curd cheese and use within a couple of days.
