  • Preparation: 10 min
  • Cooking: 50 min
  • Makes: 1 serving (251 g)
  • Difficulty: Easy
  • Diets: Vegetarian
  • Contains: dairy, gluten

Ingredients

  • 220 g Potatoes, russet, raw
  • 15 g Butter, unsalted
  • 5 g Olive oil
  • 1 g Salt
  • 5 g Breadcrumbs, dry
  • 5 g Parmesan cheese

Method

  1. Peel the potato if you like, then place it on a spoon and cut thin slices almost all the way through, stopping before the base so the potato stays in one piece and fans slightly.
  2. Place on a baking tray, drizzle with the olive oil and half the melted butter, working it between the slices, and season with the salt.
  3. Bake at 200 °C (400 °F) for 35-40 minutes, basting with the remaining melted butter halfway through, until tender inside and starting to fan open.
  4. Scatter the breadcrumbs and parmesan over the top and bake for a further 10 minutes until golden and crisp.
  5. Serve hot straight from the tray.
