Ingredients

  • 40 g Flour, all-purpose
  • 10 g Sugar
  • 8 g Butter, unsalted
  • 15 g Eggs, whole, raw
  • 17 g Milk, whole
  • 1 g Yeast, active dry

  • 0.3 g Vanilla extract
  • 0.3 g Salt
  • 0.3 g Lemon zest
  • 5 g Sugar, powdered

Method

  1. Makes 1 slice; multiply by 12 for a whole loaf. Warm most of the milk and dissolve the yeast and a pinch of the sugar in it; leave for 10 minutes until foamy.
  2. Beat the butter with the remaining sugar, egg, vanilla, salt and lemon zest, then mix in the yeast mixture and flour to a soft dough; knead for 8-10 minutes until smooth and elastic.
  3. Fold in the raisins, then cover and let rise in a warm place for about 1.5-2 hours until doubled.
  4. Shape into a round loaf in a lined tin, decorating the top with a thin dough cross or braid, and let rise for a further 30-40 minutes.
  5. Bake at 180 °C (350 °F) for 35-40 minutes until deep golden and it sounds hollow when tapped; cover loosely with foil if it browns too fast.
  6. Cool completely on a rack.
  7. Whisk the powdered sugar with the remaining milk to a thin glaze and drizzle over the top before slicing to serve.
