  • Preparation: 15 min
  • Cooking: 15 min
  • Makes: 1 serving (522 g)
  • Difficulty: Easy
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten

Ingredients

  • 400 g Milk, whole
  • 55 g Flour, all-purpose
  • 25 g Eggs, whole, raw
  • 30 g Onions, raw
  • 10 g Butter, unsalted
  • 1.5 g Salt

Method

  1. Crack the egg into a bowl and add the flour, then rub the two together between your fingertips until the mixture forms small, dry, pea-sized crumbs.
  2. Peel and finely dice the onion. Melt half the butter in a saucepan over medium heat and cook the onion for 3-4 minutes until soft and golden.
  3. Pour in the milk and salt and bring to a gentle simmer over medium heat, stirring so it does not catch on the bottom.
  4. Sprinkle the flour crumbs into the simmering milk a little at a time, stirring constantly so they stay separate instead of clumping together.
  5. Simmer for 5-6 minutes, stirring often, until the crumbs are cooked through and the soup has thickened lightly.
  6. Stir in the remaining butter, ladle into a bowl and serve hot.
