  • Preparation: 15 min
  • Cooking: 25 min
  • Makes: 1 serving (175 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten

Ingredients

  • 45 g Chocolate, dark
  • 25 g Butter, unsalted
  • 25 g Sugar, brown
  • 20 g Flour, all-purpose
  • 25 g Eggs, whole, raw
  • 5 g Cocoa powder
  • 15 g Espresso
  • 15 g Cream, heavy

Method

  1. Melt 30 g of the dark chocolate with the butter and espresso in a heatproof bowl set over simmering water until smooth.
  2. Whisk in the brown sugar, then the egg.
  3. Fold in the flour and cocoa powder until just combined, then pour into a small greased pan (this is one portion/slice; multiply by 10 for a full cake to share).
  4. Bake at 160 °C (320 °F) for 20-25 minutes until just set with a slight wobble in the center, as mud cakes are dense and fudgy rather than fully firm; cool completely.
  5. Heat the cream until just simmering, pour it over the remaining dark chocolate, let sit for 2 minutes, then stir until smooth for a glossy ganache; pour over the cooled cake and let set before slicing.
