Ingredients

  • 60 g Tapioca pearls, dry
  • 380 g Water
  • 0.5 g Salt

Method

  1. Sago flour is traditional; this catalog stand-in of tapioca pearls cooks down into a similarly sticky, glue-like porridge. Soak the pearls briefly in a little cold water.
  2. Bring the remaining water to a boil with the salt, then pour in the soaked pearls, stirring constantly.
  3. Cook over medium heat, stirring, for 10-12 minutes until the mixture turns thick, glossy and translucent all the way through.
  4. Serve hot in a bowl; traditionally eaten by twirling a portion onto a fork or stick and dipping it into a side of fish soup.
