  • Preparation: 115 min
  • Cooking: 25 min
  • Makes: 1 serving (150 g)
  • Difficulty: Hard
  • Contains: dairy, gluten, pork, soy

Ingredients

  • 45 g Flour, all-purpose
  • 20 g Milk, whole
  • 6 g Sugar
  • 1 g Yeast, active dry
  • 1 g Baking powder
  • 3 g Vegetable oil
  • 45 g Pork shoulder, raw
  • 8 g Hoisin sauce
  • 3 g Soy sauce
  • 4 g Sugar, brown
  • 0.2 g Anise seed
  • 2 g Garlic, raw
  • 10 g Water
  • 2 g Cornstarch

Method

  1. Marinate the diced pork in the hoisin sauce, soy sauce, brown sugar, garlic and a pinch of the ground anise (a five-spice stand-in) for at least 30 minutes.
  2. Cook the marinated pork in a small pan with a splash of the water over medium heat for 8-10 minutes until cooked through with no pink remaining (at least 71 °C/160 °F) and glazed; stir in the cornstarch mixed with a little water to thicken the sauce, then cool.
  3. Dissolve the yeast and sugar in the warm milk and let stand for 5 minutes; mix into the flour with the baking powder and oil to form a soft dough, knead for 8 minutes, then let rise for 1 hour until doubled.
  4. Punch down the dough, flatten a portion, spoon the cooled pork filling into the center, and gather and pinch the edges to seal into a bun (this is one bun; multiply for a batch of a dozen); let the shaped bun rest for 15 minutes.
  5. Steam the bun over boiling water for 12-15 minutes until puffed and cooked through; serve warm.
