Ingredients

  • 25 g Chickpeas, dried
  • 30 g Sugar
  • 15 g Water

Method

  1. Soak the chickpeas overnight, then boil until tender, drain and pat completely dry; roast in a low oven or dry pan until dry and slightly crisp.
  2. Bring the sugar and water to a boil in a small pan and cook to a thick, thread-like syrup.
  3. Add the roasted chickpeas to the syrup and stir constantly over low heat until the syrup crystallizes into a dry, sugary coating on each chickpea.
  4. Spread on a tray to cool and harden completely before serving; this makes one portion, so multiply for a full batch.
