  • Contains: dairy, gluten

Ingredients

  • 30 g Flour, all-purpose
  • 5 g Semolina
  • 18 g Vegetable oil
  • 50 g Potatoes, raw
  • 40 g Chickpeas, canned
  • 60 g Yogurt, plain
  • 10 g Tamarind pulp
  • 8 g Sugar
  • 5 g Mint, fresh
  • 5 g Cilantro, fresh
  • 2 g Chili peppers, green, raw
  • 0.5 g Cumin
  • 1 g Salt

Method

  1. Mix the flour, semolina, a pinch of the salt and 2 g of the oil with a little water into a stiff dough; knead briefly and rest for 15 minutes.
  2. Roll the dough thin, prick all over with a fork, and cut into small rounds or diamonds (papri).
  3. Fry the papri in the remaining oil over medium heat for 2-3 minutes per side until golden and crisp; drain on paper towel.
  4. Boil the potato until tender, then dice it; warm the chickpeas through in a little water and drain.
  5. Blend the tamarind pulp with the sugar and a splash of water for a sweet-tangy chutney, and blend the mint and cilantro with the green chilli and a splash of water for a green chutney.
  6. Whisk the yogurt with the remaining salt and the roasted cumin until smooth.
  7. Arrange the papri on a plate, top with the potato and chickpeas, then drizzle generously with the yogurt and both chutneys.
  8. Serve immediately, while the papri are still crisp, mixing everything together just before eating.
