Peda
One serving has 211 kcal and 6 g protein, and at least a fifth of a woman's daily need of cobalamin (30%), riboflavin (25%), phosphorus (24%) and calcium (20%). Ready in 20 minutes.

- Preparation: 5 min
- Cooking: 15 min
- Makes: 1 serving (55.2 g)
- Difficulty: Medium
- Diets: Vegetarian, Gluten-free
- Contains: dairy
Ingredients
- 20 g Milk powder, whole
- 15 g Milk, whole
- 15 g Sugar
- 5 g Ghee
- 0.2 g Cardamom
Method
- Whisk the milk powder and milk together into a smooth, thick paste, similar to fresh khoya.
- Melt the ghee in a heavy pan over low heat, add the khoya paste and sugar, and cook, stirring constantly, for 10-12 minutes.
- Keep stirring as the mixture thickens and starts to come away from the sides of the pan into a soft dough.
- Stir in the cardamom and take the pan off the heat once the mixture is smooth and pulls together easily.
- Let it cool just enough to handle, then roll into small balls and press each lightly between your palms into a flattened disc.
- Let the pedas cool and firm up completely at room temperature before serving; this makes about 1 serving of 3 small pedas.
