  • Makes: 1 serving (711 g)
  • Difficulty: Medium
  • Diets: Dairy-free, High protein
  • Contains: beef, egg, gluten, sesame, soy

Ingredients

  • 80 g Egg noodles, dry
  • 90 g Beef chuck, raw
  • 60 g Cucumber, raw
  • 40 g Daikon radish, raw
  • 30 g Carrots, raw
  • 4 g Garlic, raw
  • 15 g Vinegar, white
  • 10 g Soy sauce
  • 3 g Sugar
  • 25 g Eggs, whole, raw
  • 3 g Sesame oil
  • 0.3 g Black pepper
  • 350 g Water
  • 0.8 g Salt

Method

  1. Put the beef in a pot with the water and a pinch of the salt; this water becomes the broth, so use a pot that holds it all comfortably. Simmer 40-45 minutes until the beef is tender and cooked through, then lift it out to cool and slice thinly, and chill the broth.
  2. Boil the noodles until just tender, then rinse under cold water and drain well.
  3. Julienne the cucumber and daikon, and shred the carrot; hard-boil the egg (about 9 minutes), cool and halve.
  4. Whisk the chilled broth with the vinegar, soy sauce, sugar, crushed garlic, sesame oil and black pepper.
  5. Divide the noodles between bowls, top with the beef, cucumber, daikon, carrot and egg, and ladle over the cold seasoned broth to serve.
