Ingredients

  • 150 g Crab, raw
  • 60 g Onions, raw
  • 6 g Garlic, raw
  • 5 g Ginger, fresh
  • 0.3 g Bay leaves
  • 40 g Tomatoes, raw
  • 120 g Coconut milk, canned
  • 4 g Chili powder
  • 1.5 g Turmeric
  • 3 g Curry powder
  • 1 g Cumin
  • 5 g Tamarind pulp
  • 10 g Vegetable oil
  • 1 g Salt

Method

  1. Clean the crab, cracking the claws so the spices can reach the meat, or use ready-picked crab meat and pieces of shell for flavor.
  2. Heat the oil in a pot and fry the onion, garlic, ginger and bay leaf (a stand-in for curry leaves) over medium heat until softened, about 6 minutes.
  3. Stir in the chili powder, turmeric, curry powder and cumin, cook 1 minute, then add the tomatoes and cook until pulpy.
  4. Pour in the coconut milk and tamarind, bring to a simmer, then add the crab.
  5. Cover and simmer 15-20 minutes, turning the crab pieces occasionally, until the crab is cooked through and the sauce has thickened; season with salt.
  6. Serve with rice, plenty of napkins and a bowl for the shells.
