Samarkand Non (Uzbek Tandoor Bread)
One serving has 187 kcal and 6 g protein, and at least a fifth of a woman's daily need of thiamin (35%), selenium (32%), niacin (24%), riboflavin (23%), manganese (21%) and folate (21%). Ready in 170 minutes.

- Preparation: 150 min
- Cooking: 20 min
- Makes: 1 serving (72.2 g)
- Difficulty: Medium
- Diets: Vegetarian
- Contains: dairy, gluten, sesame
Ingredients
- 42 g Flour, bread (strong)
- 10 g Milk, whole
- 15 g Water
- 0.3 g Yeast, active dry
- 0.6 g Salt
- 1 g Sugar
- 2 g Vegetable oil
- 1 g Sesame seeds
- 0.3 g Cumin
Method
- Makes 1 wedge of a large, dense round loaf that serves about 8; multiply everything by 8 to bake a whole loaf.
- Dissolve the yeast in the warm milk and water, mix into the flour with the salt and oil, and knead into a stiff, smooth dough.
- Cover and let rise slowly, about 2-2.5 hours, for a denser crumb than a plain flatbread.
- Shape into a thick round loaf with a raised rim, and stamp a pattern deeply into the center so it stays flat while the rim puffs.
- Scatter the center with the sesame seeds and cumin (a stand-in for nigella seeds), and rest 20 minutes.
- Bake at 230 °C (450 °F) for 20-25 minutes until deeply golden; this loaf keeps soft for days longer than a thinner bread.
