Ingredients

  • 170 g Goat meat, raw
  • 220 g Plantains, ripe, raw
  • 80 g Onions, raw
  • 10 g Garlic, raw
  • 120 g Tomatoes, raw
  • 8 g Chili peppers, red, raw
  • 6 g Ginger, fresh
  • 15 g Palm oil
  • 15 g Tomato paste

Method

  1. Cut the goat meat into 3 cm chunks. Finely chop the onion and garlic, and roughly chop the tomato and chili.
  2. Heat the palm oil in a heavy pot over medium heat and brown the goat pieces on all sides, about 6-8 minutes.
  3. Add the onion, garlic, ginger and chili and cook for 4 minutes until softened, then stir in the tomato and tomato paste and cook for 3 minutes.
  4. Pour in the water, add the salt, bring to a boil, then cover and simmer over low heat for 1 hour, until the goat is starting to turn tender.
  5. Peel the ripe plantains and cut them into thick chunks, then add them to the pot.
  6. Simmer, uncovered, for a further 20-25 minutes, until the plantain is soft and the sauce has thickened and the goat is fully tender.
  7. Taste and adjust the seasoning, then serve hot, spooned over rice or with boiled plantain.
