  • Cooking: 15 min
  • Makes: 1 serving (430 g)
  • Difficulty: Easy
  • Diets: Vegetarian, Gluten-free
  • Contains: dairy

Ingredients

  • 260 g Fava beans, canned
  • 70 g Tomatoes, raw
  • 40 g Onions, raw
  • 6 g Chili peppers, red, raw
  • 5 g Garlic, raw
  • 12 g Ghee
  • 25 g Cottage cheese
  • 4 g Parsley, fresh
  • 8 g Lime juice

Method

  1. Tip the fava beans with their liquid into a saucepan, lightly mash about half of them with a fork or potato masher, and set over medium heat.
  2. Finely dice the tomato, onion and chili, and mince the garlic; stir half of each into the beans.
  3. Simmer the beans for 6-8 minutes, stirring occasionally, until hot through and slightly thickened; taste before adding any extra salt, as the canned beans are already salted.
  4. Melt the ghee (standing in for Eritrean tesmi spiced butter) and drizzle it over the beans just before serving.
  5. Spoon the beans into a bowl and top with the remaining diced tomato, onion and chili, the cottage cheese (standing in for fresh ayib cheese), and a scattering of chopped parsley.
  6. Squeeze the lime juice over the top and serve hot with flatbread for scooping.
