  • Cooking: 30 min
  • Makes: 1 serving (518 g)
  • Difficulty: Easy
  • Diets: Gluten-free, Dairy-free
  • Contains: beef, celery, poultry

Ingredients

  • 140 g Rice, white, long-grain
  • 70 g Onions, raw
  • 50 g Corned beef, canned
  • 6 g Chili peppers, red, raw
  • 12 g Vegetable oil
  • 180 g Chicken stock, homemade
  • 60 g Water

Method

  1. Rinse the rice well and drain. Finely slice the onion and chop the chili.
  2. Heat the oil in a saucepan over medium heat and fry the onion for 3-4 minutes until softened and lightly browned.
  3. Flake the corned beef (standing in for the salted beef traditionally used) into the pan and fry for 2 minutes, stirring, to render its flavour into the oil.
  4. Add the rice and chili and stir for 1-2 minutes to coat every grain in the oil.
  5. Pour in the chicken stock and water, bring to a boil, then cover, reduce the heat to low, and cook for 18-20 minutes until the rice is tender and the liquid is absorbed.
  6. Fluff with a fork and serve as is, or with a fried egg and a spicy pepper sauce on the side, in the classic Ghanaian style.
