  • Difficulty: Medium

  • Contains: gluten

Ingredients

  • 90 g Flour, all-purpose
  • 55 g Water
  • 5 g Olive oil
  • 1 g Salt

Method

  1. Mix the flour and salt in a bowl, then stir in the oil and gradually add the water, bringing it together into a soft, slightly sticky dough.
  2. Knead the dough on a floured surface for 5 minutes until smooth, then cover and let it rest for 45-60 minutes.
  3. Shape the dough into a flat, thick disc about 2-3 cm high.
  4. Traditionally this is baked directly in the embers of a sand fire; at home, preheat a heavy dry skillet or a bed of hot coals and place the dough on it, then heap hot ash or embers over the top (or cover with a heavy lid in a very low 150°C/300°F oven).
  5. Bake for 25-30 minutes, turning once, until the crust is firm and lightly charred and the inside is fully cooked.
  6. Brush or scrape off any ash, then break the bread into pieces by hand and serve with a meat sauce or sweet tea, in the traditional Tuareg way.
