Ingredients

  • 60 g Millet
  • 8 g Ginger, fresh
  • 0.3 g Cloves
  • 15 g Sugar
  • 600 g Water

Method

  1. Rinse the millet, then soak it in 300 g of the water for 12 hours at room temperature to soften and ferment very lightly.
  2. Drain the millet, keeping the soaking water, and blend the grains with the ginger, cloves and the reserved soaking water to a smooth, thin batter.
  3. Pour the batter into a saucepan, add the remaining water, and bring to a gentle simmer, stirring constantly to stop it catching or lumping.
  4. Cook for 8-10 minutes, stirring often, until the mixture has thickened slightly and lost its raw, starchy taste.
  5. Strain the mixture through a fine sieve or muslin cloth into a jug, pressing well to extract as much liquid as possible; discard the solids.
  6. Stir in the sugar while the liquid is still warm, then chill thoroughly and serve very cold.
