  • Difficulty: Easy

Ingredients

  • 180 g Coffee, brewed
  • 0.5 g Cloves
  • 0.4 g Black pepper
  • 8 g Sugar

Method

  1. Put the brewed coffee in a small saucepan with the cloves and black pepper (standing in for the Guinea pepper, or djar, traditionally used).
  2. Warm gently over low heat for 4-5 minutes, without boiling, so the spices infuse into the coffee.
  3. Strain the coffee through a fine sieve into a cup to remove the whole spices.
  4. Stir in the sugar to taste while still hot.
  5. Serve hot, in small cups, in the traditional Senegalese style.
