Sabaayad (Somali Layered Flatbread)
One serving has 450 kcal and 8 g protein, and at least a fifth of a woman's daily need of thiamin (57%), selenium (49%), folate (37%), riboflavin (36%), niacin (34%) and manganese (31%). Ready in 60 minutes.

- Preparation: 45 min
- Cooking: 15 min
- Makes: 1 serving (144 g)
- Difficulty: Medium
- Diets: Vegan, Dairy-free
- Contains: gluten, peanut
Ingredients
- 80 g Flour, all-purpose
- 45 g Water
- 1 g Salt
- 18 g Peanut oil
Method
- Mix the flour and salt in a bowl and gradually add the water, bringing it together into a soft dough.
- Knead for 5-6 minutes until smooth, then cover and rest for 20 minutes.
- Roll the dough out into a thin circle, brush the surface with a little of the oil, and fold it into a fan or roll it up into a rope, then coil it into a spiral.
- Roll the coil out again gently into a flat disc about 20 cm across, taking care not to tear the layers.
- Heat a dry, heavy skillet over medium heat, add a little of the remaining oil, and cook the flatbread for 2-3 minutes per side, brushing with more oil, until golden-brown spots appear and it puffs slightly.
- Scrunch the hot bread lightly between your hands to separate the layers, then serve warm, often with tea or a savoury stew.
