Ingredients

  • 300 g Milk, whole
  • 20 g Pasta, dry
  • 10 g Tapioca pearls, dry
  • 25 g Sugar
  • 0.5 g Cardamom
  • 1 g Cinnamon
  • 8 g Butter, unsalted

Method

  1. Soak the tapioca pearls (standing in for the sago traditionally used) in a little warm water for 15 minutes, then drain.
  2. Break the vermicelli into short lengths.
  3. Melt the butter in a saucepan over medium heat and toast the vermicelli for 1-2 minutes until lightly golden.
  4. Pour in the milk and add the drained tapioca, sugar, cardamom pods and cinnamon stick.
  5. Bring to a gentle simmer, then reduce the heat to low and cook for 12-15 minutes, stirring often, until the vermicelli and tapioca are tender and the mixture has thickened slightly.
  6. Stir in the raisins and simmer for a final 2 minutes until they plump up.
  7. Serve warm in bowls or cups, as is traditional during Ramadan in Cape Malay households.
