  • Cooking: 25 min
  • Makes: 1 serving (155 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten

Ingredients

  • 60 g Flour, bread (strong)
  • 30 g Milk, whole
  • 1.5 g Yeast, active dry
  • 10 g Sugar
  • 15 g Butter, unsalted
  • 15 g Eggs, whole, raw
  • 20 g Apricot jam
  • 3 g Sugar, powdered
  • 0.3 g Salt

Method

  1. Warm the milk, dissolve the yeast and sugar in it, and let stand 10 minutes until foamy (this is 1 portion; multiply by 6 for a full batch).
  2. Mix with the flour, egg, softened butter and salt; knead 8-10 minutes to a smooth, soft dough, then cover and let rise 1 hour until doubled.
  3. Divide into small balls, flatten each, spoon a little apricot jam into the centre, and pinch closed to seal.
  4. Arrange the balls close together, seam-side down, in a buttered baking dish so they touch.
  5. Brush with melted butter, cover and let rise 20-30 minutes more, then bake at 190 °C (375 °F) for 20-25 minutes until golden and fused together at the sides.
  6. Dust with powdered sugar and pull apart to serve warm.
