  • Preparation: 120 min
  • Cooking: 5 min
  • Makes: 1 serving (178 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 70 g Flour, bread (strong)
  • 30 g Eggs, whole, raw
  • 20 g Milk, whole
  • 25 g Butter, unsalted
  • 1.5 g Yeast, active dry
  • 30 g Sugar
  • 1 g Vanilla extract
  • 0.5 g Salt

Method

  1. Warm the milk slightly, then dissolve the yeast in it with a pinch of the sugar; let it stand for 5-10 minutes until foamy.
  2. Mix the flour and salt with the yeast mixture, egg, vanilla and softened butter into a soft, slightly sticky dough, kneading for about 8 minutes.
  3. Cover and let it rise in a warm place for 1-1.5 hours, until roughly doubled.
  4. Gently fold in the sugar (pearl or other coarse sugar is traditional, but granulated works too), being careful not to overwork the dough.
  5. Divide and shape into a ball, then let it rest for 20 minutes.
  6. Preheat a waffle iron until hot, then cook the dough for 3-4 minutes, until deep golden and caramelised, with the sugar forming a crackly crust.
  7. Cool briefly on a rack before eating, since the caramelised sugar stays very hot; this makes 1 waffle, so multiply everything for more.
