  • Makes: 1 serving (413 g)
  • Difficulty: Medium
  • Diets: Low carb
  • Contains: beef, celery, dairy, egg, gluten, poultry

Ingredients

  • 300 g Chicken broth
  • 50 g Veal, ground, raw
  • 5 g Breadcrumbs, dry
  • 35 g Eggs, whole, raw
  • 20 g Milk, whole
  • 0.2 g Nutmeg
  • 2 g Parsley, fresh
  • 0.5 g Salt
  • 0.2 g Black pepper

Method

  1. Mix the ground veal with the breadcrumbs, half the beaten egg, a little nutmeg, salt and pepper, then roll into very small meatballs.
  2. Whisk the remaining egg with the milk and a pinch of salt; pour into a small buttered dish and steam over simmering water for about 15 minutes until set like a firm custard. Cool and cut into small cubes (Eierstich).
  3. Bring the broth to a gentle simmer and slide in the meatballs; poach for 8-10 minutes until cooked through and their juices run clear (74 °C/165 °F).
  4. Add the egg custard cubes to the soup just before serving so they heat through without breaking up.
  5. Ladle into a bowl and scatter with the parsley.
