  • Cooking: 15 min
  • Makes: 1 serving (208 g)
  • Difficulty: Easy
  • Diets: Dairy-free
  • Contains: gluten, mustard, pork

Ingredients

  • 150 g Pork sausages, fresh
  • 50 g Bread rolls, hard
  • 8 g Mustard

Method

  1. Weisswurst are a delicate veal-and-pork sausage that should never be boiled hard; if you can't find them, other fresh raw pork sausages make a reasonable stand-in.
  2. Bring a large pan of water to just below a simmer, with only the odd small bubble, add the sausages, and heat gently for 10-15 minutes until cooked through with no pink remaining (74 °C/165 °F).
  3. Lift the sausages out of the water and let them drain briefly.
  4. Serve warm with the bread roll (or a pretzel, if you have one) and a generous spoonful of sweet mustard, traditionally as a late-morning snack.
