  • Makes: 1 serving (471 g)
  • Difficulty: Medium
  • Diets: Pescatarian, Gluten-free, Dairy-free, High protein
  • Contains: egg, fish

Ingredients

  • 130 g Cod, raw
  • 220 g Potatoes, russet, raw
  • 15 g Olive oil
  • 10 g Garlic, raw
  • 50 g Eggs, whole, raw
  • 40 g Bell pepper, red, raw
  • 5 g Parsley, fresh
  • 0.8 g Salt

Method

  1. Soak about 80 g of dry salt cod in several changes of cold water in the fridge for 24-36 hours to remove most of the salt; it swells to the 130 g the ingredients count, and the salt listed stands for what stays in it. Drain and flake it, discarding any skin or bones.
  2. Roast the red pepper over a flame or under a hot grill until blistered, then peel, deseed and slice it into strips.
  3. Peel and dice the potatoes and boil in unsalted water for 12-15 minutes until tender; drain.
  4. Boil the egg for 9 minutes, cool in cold water, then peel and chop it.
  5. Warm the olive oil in a pan and gently cook the garlic until fragrant but not browned.
  6. Add the flaked cod and cook gently for 3-4 minutes, breaking it into small flakes with a spoon.
  7. Stir in the potatoes and roasted pepper and warm through; taste before adding any salt, as the cod is already salty.
  8. Scatter the chopped egg and parsley over the top and serve hot.
