  • Makes: 1 serving (537 g)
  • Difficulty: Medium
  • Diets: Pescatarian, Gluten-free, Dairy-free, Low carb
  • Contains: celery, egg, fish

Ingredients

  • 100 g Potatoes, red, raw
  • 300 g Fish stock
  • 80 g Cod, raw
  • 20 g Egg yolks, raw
  • 25 g Olive oil
  • 8 g Lemon juice
  • 0.5 g Salt
  • 3 g Parsley, fresh

Method

  1. Peel and dice the potato and simmer it in the fish stock for 10-12 minutes until tender.
  2. Cut the fish into chunks and add to the simmering stock for the last 4-5 minutes, until just cooked.
  3. Meanwhile whisk the egg yolk with the lemon juice, then drizzle in the olive oil while whisking constantly to build a thick, mayonnaise-like emulsion.
  4. Take the pot off the heat and, whisking constantly, ladle in a little of the hot stock to loosen the emulsion, then stir it back into the pot.
  5. Warm through gently over the lowest heat, stirring, until the soup thickens slightly; do not let it boil or it will split.
  6. Season with the salt and scatter with parsley before serving; use a well-heated (not raw) yolk and avoid for anyone who should not eat lightly cooked egg.
