  • Contains: alcohol, beef, celery, dairy, gluten, pork, sulphite

Ingredients

  • 180 g Beef chuck, raw
  • 20 g Bacon, raw
  • 40 g Shallots, raw
  • 40 g Carrots, raw
  • 5 g Garlic, raw
  • 120 g Wine, red
  • 80 g Beef broth
  • 10 g Tomato paste
  • 8 g Flour, all-purpose
  • 50 g Mushrooms, cremini, raw
  • 5 g Butter, unsalted
  • 5 g Vegetable oil
  • 0.3 g Bay leaves
  • 0.5 g Thyme, fresh
  • 1 g Salt
  • 0.3 g Black pepper

Method

  1. Pat the beef chunks dry and season with a little of the salt and pepper. Heat the oil in a heavy pot and brown the beef in batches over high heat, then set it aside.
  2. In the same pot, fry the bacon for 3-4 minutes until golden, then add the shallots and carrots and cook for 5 minutes.
  3. Stir in the garlic and flour and cook for 1 minute, then return the beef and bacon to the pot.
  4. Pour in the red wine and beef broth, add the tomato paste, bay leaf and thyme, and bring to a simmer.
  5. Cover and cook very gently, on the stove or at 150 °C (300 °F) in the oven, for about 2.5-3 hours, until the beef is fork-tender.
  6. In the last 15 minutes, melt the butter in a small pan and sauté the mushrooms until golden, then stir them into the stew.
  7. Season with the remaining salt and pepper and serve hot, traditionally with boiled potatoes or crusty bread.
