  • Cooking: 10 min
  • Makes: 1 serving (186 g)
  • Difficulty: Hard
  • Contains: alcohol, beef, dairy, egg, gelatin, gluten, pork

Ingredients

  • 20 g Ladyfingers
  • 40 g Milk, whole
  • 18 g Egg yolks, raw
  • 15 g Sugar
  • 2 g Gelatin
  • 40 g Cream, heavy
  • 45 g Strawberries, raw
  • 1 g Vanilla extract

Method

  1. Makes 1 slice; multiply by 8 for a whole charlotte. Warm the milk with the vanilla. Whisk the egg yolk with the sugar, then whisk in the hot milk.
  2. Return to low heat and stir until the custard thickens enough to coat the back of a spoon (do not boil); off the heat, dissolve the softened gelatin into it.
  3. Cool the custard until just starting to set, then fold in the cream, whipped to soft peaks, to make the bavarois.
  4. Brush the ladyfingers with a little water mixed with the spirits and line the base and side of a small mould or ramekin with them.
  5. Fill with the bavarois, layering in the chopped strawberries, and smooth the top.
  6. Chill for at least 4 hours, or until fully set, then unmould to serve.
