  • 15 g Shallots, raw
  • 30 g Wine, white
  • 50 g Beef broth
  • 1 g Tarragon, dried
  • 3 g Lemon juice
  • 50 g Mushrooms, cremini, raw

Method

  1. Trim the potato into small olive shapes, then parboil 4 minutes, drain and pan-roast in the olive oil over medium heat, turning, until golden and tender, about 15 minutes; season and keep warm.
  2. Pat the tenderloin dry and season all over with salt and pepper.
  3. Sear it in half the butter over high heat for 2 minutes a side, then roast at 200 °C (400 °F) for 10-12 minutes for medium-rare (54 °C/130 °F); rest 10 minutes.
  4. In the same pan, soften the shallot and mushrooms, then add the wine and simmer until nearly gone.
  5. Add the beef broth and tarragon, simmer to reduce by half, then whisk in the remaining butter and the lemon juice off the heat to make a glossy sauce.
  6. Slice the rested beef and serve with the sauce spooned over and the château potatoes alongside.
