One serving has 550 kcal and 7 g protein, and at least a fifth of a woman's daily need of selenium (36%), thiamin (27%), riboflavin (25%), manganese (24%) and niacin (22%). Ready in 40 minutes.

- Preparation: 15 min
- Cooking: 25 min
- Makes: 1 serving (213 g)
- Difficulty: Medium
- Diets: Vegetarian
- Contains: dairy, egg, gluten
Ingredients
- 70 g Puff pastry
- 110 g Apples, raw
- 15 g Sugar
- 5 g Butter, unsalted
- 5 g Lemon juice
- 0.3 g Cinnamon
- 8 g Eggs, whole, raw
Method
- Peel, core and dice the apple, then cook it with the sugar, butter, lemon juice and cinnamon in a small pan over medium heat for 8-10 minutes until soft and any liquid has evaporated; cool completely.
- Roll the puff pastry into an oval and spoon the cooled apple filling onto one half, leaving a clear border.
- Brush the border with a little beaten egg, fold the pastry over to enclose the filling, and press the edges firmly to seal; crimp with a fork.
- Brush the top with more beaten egg and score a few shallow curved lines in a fan pattern for the classic look.
- Bake at 200 °C (400 °F) for 20-25 minutes until puffed and deep golden. Cool slightly before eating.
