Ingredients

  • 25 g Puff pastry
  • 15 g Water
  • 8 g Butter, unsalted
  • 10 g Flour, all-purpose
  • 15 g Eggs, whole, raw
  • 15 g Sugar
  • 40 g Milk, whole
  • 8 g Egg yolks, raw
  • 4 g Cornstarch
  • 0.3 g Vanilla extract
  • 30 g Cream, heavy
  • 3 g Sugar, powdered

Method

  1. Makes 1 slice; multiply by 8 for a whole cake. Prick a disc of puff pastry and bake at 200 °C (400 °F) for 12-15 minutes until crisp and golden; cool.
  2. Bring the water and butter to a boil, beat in the flour off the heat, then beat in the egg gradually to make a smooth choux paste.
  3. Pipe small balls of choux onto a tray and bake at 190 °C (375 °F) for 20-22 minutes until puffed and golden; cool.
  4. Whisk the milk, egg yolk, 10 g of the sugar, cornstarch and vanilla, cook over low heat stirring until thick, then cool to make pastry cream; fill the choux puffs with it.
  5. Melt the remaining sugar in a dry pan to a light caramel, dip the top of each filled puff, and stick the puffs around the edge of the pastry base with a dab of caramel.
  6. Whip the cream with the powdered sugar to firm peaks and pipe it decoratively into the centre of the ring before serving.
