  • Cooking: 20 min
  • Makes: 1 serving (311 g)
  • Difficulty: Medium
  • Diets: High protein, Low carb
  • Contains: beef, celery, dairy, gluten, pork

Ingredients

  • 150 g Beef liver, raw
  • 40 g Bacon, raw
  • 60 g Onions, raw
  • 10 g Flour, all-purpose
  • 10 g Butter, unsalted
  • 40 g Beef broth
  • 1 g Salt
  • 0.3 g Black pepper

Method

  1. Fry the bacon in a pan until crisp; remove and set aside, leaving the fat in the pan.
  2. Add the sliced onion to the pan and cook over medium-low heat for 10-12 minutes until soft and golden; remove and set aside with the bacon.
  3. Season the liver (calf's liver if you can get it; ordinary beef liver here works well too) and dust lightly with flour.
  4. Melt the butter in the same pan and fry the liver over fairly high heat for 1-2 minutes a side, until browned outside but still a little pink in the middle.
  5. Pour in the beef broth, scraping up the browned bits, and simmer 1 minute to make a light gravy.
  6. Return the bacon and onions to the pan to warm through, and serve everything together with the gravy spooned over.
