Stottie Cake
One serving has 402 kcal and 11 g protein, and at least a fifth of a woman's daily need of thiamin (82%), selenium (65%), niacin (53%), folate (50%), riboflavin (47%) and manganese (40%). Ready in 110 minutes.

- Preparation: 80 min
- Cooking: 30 min
- Makes: 1 serving (156 g)
- Difficulty: Medium
- Diets: Dairy-free
- Contains: gluten, pork
Ingredients
- 90 g Flour, bread (strong)
- 1.5 g Yeast, active dry
- 55 g Water
- 8 g Lard
- 1.5 g Salt
Method
- Mix the flour, yeast and salt, then work in the water and lard to a firm dough; knead 8-10 minutes until smooth.
- Cover and let rise 1 hour until doubled.
- Knock back gently and shape into a flat, dense round about 3-4 cm thick, pressing a dimple in the centre with your fingers (this stops it rising too much in the oven).
- Let rise 20 minutes more, then bake at 220 °C (425 °F) on a floured tray for 25-30 minutes until pale golden top and bottom, with a dense, close crumb.
- Cool briefly on a rack before splitting and filling, traditionally with bacon or pease pudding.
