  • Preparation: 20 min
  • Cooking: 180 min
  • Makes: 1 serving (311 g)
  • Difficulty: Medium
  • Contains: beef, dairy, gluten

Ingredients

  • 65 g Flour, self-rising
  • 30 g Beef suet
  • 40 g Water
  • 1 g Salt
  • 35 g Butter, unsalted
  • 45 g Sugar, brown
  • 90 g Lemons, raw
  • 5 g Lemon zest

Method

  1. Mix the self-rising flour, suet and salt, then stir in the cold water to a soft, non-sticky dough for the suet crust.
  2. Butter a 350 ml pudding basin. Roll two-thirds of the dough into a circle and press it into the basin, leaving a little overhang.
  3. Pack half the butter and brown sugar into the base. Wash the lemon and prick it all over with a skewer, then sit it in the middle with the zest, and pack the rest of the butter and sugar around it.
  4. Roll the remaining dough into a lid, dampen the edges and press it over the filling to seal tightly.
  5. Cover the basin with pleated buttered baking paper and foil, tie with string, and steam over simmering water for 3 hours, topping up the water as needed.
  6. Turn the pudding out onto a deep plate so the buttery sugar syrup runs down the sides, then cut into it at the table to release the hot lemon syrup from the whole lemon inside.
