  • Makes: 1 serving (87 g)
  • Difficulty: Medium

  • Contains: dairy, egg

Ingredients

  • 25 g Lemon juice
  • 2 g Lemon zest
  • 25 g Sugar
  • 20 g Eggs, whole, raw
  • 15 g Butter, unsalted

Method

  1. Whisk the lemon juice, zest, sugar and egg together in a heatproof bowl (multiply everything by 6 for a full 300 g jar).
  2. Set the bowl over a pan of gently simmering water (don't let the bowl touch the water) and whisk in the butter a little at a time.
  3. Cook, stirring constantly, for 8-10 minutes until the mixture thickens enough to coat the back of a spoon.
  4. Remove from the heat and strain if you like for extra smoothness.
  5. Cool, then spoon into a clean jar and refrigerate; use within 2 weeks, or spread onto warm scones or toast straight away.
